Whole Wheat, Banana, Protein Waffles

Have you ever had an idea come to you in a dream? Like something to do when you wake up or an answer to a question you've been searching for? Pretty often, I have recipe ideas come to me during my slumber & wake up ready to give them a go. Yesterday morning I woke from a dream of vegan pancake recipe testing & decided I was going to make waffles for breakfast. Hello kitty vegan waffles, nonetheless. 

I've been seeing so many awesome vegan pancake recipes recently & have been wanting to give them a shot, but since I have a waffle maker, I decided to go this route instead. In my dream, I knew that the base of my mixture was going to include protein powder & bananas. It wasn't until I woke up, however, that I figured out the rest. In my pantry, I had whole wheat flour & soy flour. Soy flour works pretty well in a number of different recipes. For these waffles, I decided to use the soy flour as my egg substitute. So for each egg, I just used a Tbsp of soy flour. Soy flour tends to brown more quickly, but since I was using a waffle maker & not a skillet, the soy flour actually gave the waffles beautifully golden brown crisp edges! You can even toast the soy flour prior to adding it into the mixture to add more of a nutty flavor. 

So for this recipe, you will need the following:

Yield: About 16 Kitties or 3 Regular Waffles

1 1/2 C Whole Wheat Flour

2 Tbsp Soy Flour

1 Scoop Vegan Vanilla Sun Warrior Protein (or any protein powder you like)

2 C Coconut Milk

1 Tbsp Honey

1 Ea Large Banana, mashed

1/2 Tsp Cinnamon

1/2 Tsp Freshly Ground Nutmeg

1/4 Tsp Salt

2 Tsp Baking Powder

1/4 Tsp Baking Soda

*Mix your dry ingredients together first before adding the coconut milk, banana & honey. Soy flour can easily get clumped together. Once all of your ingredients are mixed, pour into a greased (I used coconut cooking spray) waffle maker. Top your waffles with fresh fruit, nuts, coconut flakes &/or your choice of sizzurp & enjoy!!
